About the Producer
Sitio Baixão da Serra is a small family-run coffee farm in Caldas, Minas Gerais, Brazil, covering just over two hectares.
Abner and Vanessa Carvalho bought the farm in 2011, selling their house to fund the purchase. Since then, they have developed the farm into a consistent producer of quality natural coffees and are members of the Cooxupé cooperative.
Coffee growing runs through the wider family, with Abner's brothers farming neighbouring plots. The family work closely together during harvest, sharing knowledge and ideas around processing and sustainable farming practices.
With just over two hectares under cultivation, the farm produces around 100 bags of coffee each year. Its small scale allows the Carvalhos to focus closely on quality and carefully manage each stage of production.

Processing Method
This coffee is processed using a carefully controlled natural method, which the Carvalho family have refined over more than a decade of farming.
- Selective Harvesting: Ripe coffee cherries are carefully harvested throughout the picking season.
- Full-Sun Drying: The whole cherries are laid out to dry in full sun.
- Regular Turning: The cherries are turned regularly to encourage even and consistent drying.
- Overnight Resting: The coffee is piled up and covered overnight, helping to protect it from moisture and temperature changes.
- Slow Drying: This controlled process allows the cherries to dry gradually, reducing the risk of uneven or over-fermented drying.
- Preparation: Once fully dried and stabilised, the coffee is prepared for export and packed in GrainPro liners inside jute sacks.
This careful natural process helps develop the coffee's characteristic fruit sweetness, rounded body and rich chocolate complexity.
