About Quebraditas Coffee Farms
Quebraditas Coffee Farms is a family project focused on producing exceptional specialty coffees through advanced fermentation processes. Located in the high-altitude region of Colombia’s Central Mountain Range, the farm spans 18 hectares, with 10 dedicated to traditional varieties like Caturra and Colombia. The farm is also working toward a long-term goal of dedicating the entire property to exotic varietals such as Geisha, Wush Wush, and Pacamara. Their focus on soil health, strategic shading, organic matter use, and pH management results in coffees with exceptional flavour profiles.

Processing Method
This Sidra lot showcases advanced controlled fermentation:
- Selective hand-harvesting (90% ripe cherry minimum)
- Floating to remove underripe and defective cherries
- 16-hour oxidation in food-grade drums
- Dry pulping
- 24-hour oxidation after pulping, followed by a 45°C thermal shock wash
- Maceration with starter pulp (Geisha, Sidra, Pink Bourbon) and inoculation with hybrid yeast (Saccharomyces cerevisiae × bayanus)
- 36-hour fermentation under 25°C
- Final 5°C cold wash to seal the process
- Slow drying for 76 hours at ~40°C, then stabilisation in GrainPro bags
