About Quebraditas Coffee Farms
Quebraditas Coffee Farms is a family project focused on producing exceptional specialty coffees through advanced fermentation processes. Located in the high-altitude region of Colombia’s Central Mountain Range, the farm spans 18 hectares, with 10 dedicated to traditional varieties like Caturra and Colombia. The farm is also working toward a long-term goal of dedicating the entire property to exotic varietals such as Geisha, Wush Wush, and Pacamara. Their focus on soil health, strategic shading, organic matter use, and pH management results in coffees with exceptional flavour profiles.


Flavor Profile
This coffee is incredibly aromatic with Peaches & Cream notes, making it a perfect choice for fruit fermentation lovers. Expect:

Processing Method
The coffee undergoes a meticulous co-fermentation process that blends ripe peach with yeast, elevating the flavour profile to new heights. Here’s how it’s done:

  1. Harvesting: Only cherries that are at least 90% ripe are harvested to ensure quality.
  2. Floating: This step removes any green, overripe, or dry cherries.
  3. Oxidation: The cherries are oxidized in food-grade plastic drums for 12 hours.
  4. Pulping: The cherries are pulped dry.
  5. Fermentation after Pulping: The cherries are fermented in open tanks for 24 hours to remove the mucilage.
  6. Co-Fermentation: The cherries ferment for 72 hours at temperatures below 25°C, with the addition of ripe peach and specific yeast.
  7. Washing: After fermentation, the coffee is washed to remove any remaining fruit residue.
  8. Drying: The coffee is mechanically dried for 42 hours at 38°C.
  9. Stabilisation: Finally, the coffee is stored in GrainPro-type bags to stabilize the beans for optimal freshness.
