Processing Method:
This lot undergoes a carefully controlled washed process designed to preserve the clarity and character of the Caturra Chiroso varietal:
- Harvesting: Ripe cherries are carefully hand-picked and selected to ensure only high-quality fruit enters the process
- Cherry Fermentation: Whole cherries undergo a 72-hour fermentation.
- Depulping & Oxidation: The cherries are depulped before being held in sealed bags for a further 24 hours of oxidation.
- Washing: The coffee is then washed using a traditional washed process.
- Drying: The parchment is dried on raised African beds for approximately 15 days, allowing for a slow and even reduction in moisture.
- Stabilisation: Following drying, the coffee is rested and stabilised in GrainPro-style bags for 30 days.
About the Producer:
Edinson Argote is a passionate young coffee producer whose journey into specialty coffee is rooted in resilience, curiosity, and innovation. After a challenging early life and 18 months of military service, he discovered specialty coffee while working at a buying station in Acevedo, Huila.
Through study and mentorship on some of Cauca’s most progressive farms, Edinson refined his approach to quality and processing. Today, he runs Quebraditas Coffee Farm with his family, cultivating exotic and highly sought-after varieties including Gesha, Bourbon Sidra, Ombligon, Eugenoids, Chiroso, and Laurina — all driven by a commitment to precision and progress.
Brewing Recommendations:

- Pour-Over / Filter: Brings out the blackberry acidity and delicate marzipan sweetness; use a medium-fine grind and 92–94°C water for a clean, layered cup.
- Immersion / French Press: Emphasises the rich chocolate character and body; steep for 3–4 minutes for a fuller, rounded cup.
