About Kedamesa Farm
Produced by Negash Abarago on his family’s farm in the Kedamesa village of Limu, Ethiopia, this coffee represents a true classic Ethiopian washed coffee. Negash, a second-generation farmer, inherited the farm from his parents and has spent over 10 years cultivating high-quality coffee on this land. Located in the Oromia zone, Kedamesa sits at an elevation of 2,050 meters above sea level, where the rich soil and high altitude contribute to the coffee's exceptional flavour profile. Harvesting took place between October 2023 and December 2023, and the coffee was processed at the local Kedamesa drying station.

Flavor Profile
This coffee offers a silky stone fruit complexity with fresh and vibrant acidity, making it a standout cup for those who enjoy bright, fruity flavours. Expect:

  • Stone Fruit: A complexity of fresh, juicy stone fruits like peach and apricot.
  • Vibrant Acidity: A lively, crisp acidity that adds freshness to the cup.
  • Bergamot: A subtle touch of Bergamot on the finish, reminiscent of Earl Grey tea.

Processing Method
The coffee undergoes a traditional washed (wet) processing method, which highlights the clarity and brightness of the flavors:

  1. Hand Sorting: Cherries are hand sorted to remove any under-ripe or damaged beans.
  2. Pulping: The cherries are pulped to remove the outer skin.
  3. Washing: The beans are washed and soaked in water overnight to remove the mucilage.
  4. Final Wash: After soaking, the beans are washed again to ensure purity and cleanliness.
  5. Drying: The coffee is dried on raised African beds, carefully monitored to protect it from intense midday sun and rain. This process takes between 10 and 12 days, ensuring the beans dry evenly for optimal flavor development.

Brewing Recommendations
This Ethiopian coffee is best suited for those who appreciate clarity and complexity in their cup:

  • Espresso: A vibrant and fruity espresso with a smooth Bergamot finish.
  • Filter (Pour-Over/Drip): Bright and clean, with a pronounced stone fruit character and lively acidity.
  • French Press: Full-bodied with a silky texture, showcasing the stone fruit and Bergamot notes.

Perfect for:
Coffee enthusiasts who enjoy classic Ethiopian washed coffees with a bright, fruity profile and a subtle, aromatic finish.
