About La Malquerida
La Malquerida is a family-run coffee farm in Tacabamba, Chota, led by second-generation producer Demóstenes Tantaleán Acuña. The farm was established following his family’s recognition of the region’s ideal climate for coffee production and its potential as a sustainable livelihood.
Growing up within coffee farming, Demóstenes developed a deep connection to the land and a strong vision for quality-focused production. Rather than pursuing volume, he shifted toward cultivating high-end varietals such as Geisha, with the goal of elevating both cup quality and regional recognition.
His work reflects a balance between tradition and innovation — combining organic farming practices with modern processing techniques to produce expressive, high-clarity coffees that showcase the potential of Cajamarca’s high-altitude terroir.

Processing Method
This lot uses a washed process with controlled anaerobic fermentation to enhance clarity while amplifying floral and fruit expression.
- Selective Harvesting: Only fully ripe cherries are hand-picked for optimal sweetness and uniformity.
- Floating & Sorting: Cherries are floated to remove defects and low-density fruit.
- Anaerobic Fermentation: A controlled 36-hour oxygen-limited fermentation enhances aromatic complexity and varietal expression.
- Washing: Coffee is thoroughly washed to remove all remaining mucilage.
- Drying: Dried slowly in a parabolic solar dryer to ensure even moisture reduction and stability.
- Storage: Rested and stored under controlled conditions to preserve quality and traceability.
This process produces a clean, elegant cup with layered florals, vibrant acidity, and a refined tropical sweetness.
