Specialty Coffee Collection – 2 bags - 200g each
This Autumn, we’re bringing together two exceptional coffees from Ethiopia, both produced using an innovative and highly distinctive processing method known as River Submerged.
From Sidamo and Bura Woreda, these coffees share the same 74158 varietal and an unusual anaerobic fermentation — sealed in bags and submerged in cold stream water for four days. Yet each expresses its origin and character in its own unique way.
1. Ethiopia – Bekele Yutute | River Submerged – 200g

The River Submerged Process
Both coffees have undergone the same distinctive processing method.
Fresh coffee cherries are sealed inside bags and submerged in cold stream water for four days, creating an anaerobic fermentation environment at a naturally cool temperature.
Following fermentation, the coffee is carefully spread beneath a shade net and dried slowly for approximately 30 days. Once sufficiently dried, the coffee is bagged and transported to SMS Dry Mill in Addis Ababa for milling.
The result is an unusually expressive style of Ethiopian coffee, where delicate florals, fruit and sweetness are allowed to take centre stage.
Meet the Producers
Bekele Yutute
Bekele Yutute owns three coffee farms in Bensa Woreda — Dambi, Kokose and Murago. His Kokose farm sits at particularly high elevation, reaching up to 2,345 metres above sea level.
Bekele began cultivating JARC 74110 coffee at Kokose in 2021 alongside his brother-in-law, Samuel. Their commitment to quality was quickly recognised, earning 5th place in the 2021 Cup of Excellence and 3rd place in the 2024 Cup of Excellence.
Located on an open mountainside, Kokose benefits from cool temperatures and frequent cloud cover — conditions that contribute to the slow development and distinctive character of the coffee.
Mate Mathios
Mate Mathios produces coffee in Bura Woreda, Keramo Kebele, an area renowned for producing distinctive high-altitude Ethiopian coffees.
Working with the same innovative River Submerged processing technique, Mate has developed a coffee that highlights the delicate, highly aromatic side of Ethiopian Arabica — with lavender, violet and marshmallow creating an exceptionally perfumed cup.
